“Dry brined some tofu w/smoked salt and paprika, cut it into “lardons” & fried it crispy. Set aside. Fried some shallots & chickpeas in reserved oil. Otherwise standard carbonara spec, w/ a bunch of radish greens blanched w/ the rigatoni. Toppers = fried onions, lemon zest, parm.”
