Mushrooms with Vermicelli Noodles
What you need:
Wide rice noodles
Bella mushrooms
Brown/white beech mushrooms
Enoki mushrooms
1 inch ginger
1 bunch cilantro
Sesame oil
Lao Gan Ma chili oil
Soy sauce to taste
Splash of chicken broth
Dash of fish sauce
Umami powder
White pepper
Mince the ginger and chop up the cilantro stems
Heat a pan with sesame oil until it's hot and throw in the ginger and cilantro stems and fry until aromatic. Add all the mushrooms and sautée for a couple minutes. Then add the chili oil and fry until cooked through.
Meanwhile you should be boiling a pot of water for the rice noodles and cook them until soft. When cooked enough drain them, then run them under cold water in the strainer.
Add the noodles to your pan with the mushrooms
Then add the soy sauce, and chicken brother, fish sauce, white pepper, and umami powder. do this all to taste.
Top off with more cilantro
